friends, last week was a week. one of those where every time you turn around there’s something else seemingly major that needs attention. i can’t even tell you how much – when those weeks hit – that knowing what the heck we’re going to eat for dinner is such a help. here’s what i’ll say though too: even though i have a weekly meal plan, it doesn’t mean that we aren’t flexible with it. if there’s a night where we just need to change up what’s on the plan (aka grab dinner from somewhere else), we do it. because during the tough weeks, sometime you just need a night without dishes and clean up.
this week, i think we should be able to pretty much stick to the plan. we have the usual this week, plus a visit from some family to check out the boys’ cross country meet this weekend. so here’s what’s on the fridge this week for our fam!

monday, 9/22: meatball subs (my recipe: for weeknights, i use frozen meatballs. i add these to the crock pot with two jars of marinara. set it on low for 4 hours. once ready, put these on sub rolls with some shredded mozzarella, red pepper flakes, or sprinkle cheese.) / roasted veggies (my recipe: cut up sweet potatoes, carrots, mushrooms, broccoli. spread out on a cookie sheet, spray with olive oil spray and sprinkle your favorite seasoning (i love kinder’s garlic butter!). put in the oven at 350 degrees for 15-20 minutes (depending on how hot your oven runs)
tuesday, 9/23: homemade burrito bowls (again, no recipe. i make rice in the rice cooker, cook up at least two pounds of ground turkey with taco seasoning, and put out salsa, shredded cheese, cholula, shredded lettuce, sour cream, and black beans. everyone makes their own!)
wednesday, 9/24: juicy grilled pork chops / air fryer potatoes / steamed corn
thursday, 9/25: leftovers (*total honesty: this is the plan. i am not sure we’re going to have enough leftovers from earlier in the week to cover this off. i have two teen boys who e-a-t. this might end up being a “pick up dinner on the way home from soccer” night.)
friday, 9/26 (aka the night before a cross country meet!): air fryer chicken parmesan / barilla protein pasta / salad
saturday, 9/27: honey sriracha salmon bowls / edamame
sunday, 9/28: dad’s taco mess (icymi: this is what it sounds like. taco stuff. all build-your-own.)
