
it’s homecoming week in our household! if you checked out my previous blog post, you already know i’m planning a massive dinner for nearly 30 teenagers for this weekend. but before that, there are hoco activities every. single. night this week. which means we’re all all over, all of the time.
we’re juggling high school powder buff volleyball games, powder puff football games, the homecoming parade, prep for the homecoming dinner + dance, and the usual work, school, homework, soccer practices, and cross country meets.
so while i’m always on the prowl for quick and easy dinners, they are really, absolutely, 100% necessary this week!
ready? here we go on the dinner ideas for this week!
monday, 10.6.25: korean beef bowls / edamame
tuesday, 10.7.25: slow cooker white chicken chili
wednesday, 10.8.25: turkey avocado clubs (i’m just making these up; sliced turkey, bacon, lettuce, tomatoes, some avocado!) / BBQ baked chips / fruit
thursday, 10.9.25: meatball subs (this is super easy: throw frozen meatballs in the crock pot with two jars of marinara) / salad / air fryer potatoes
friday, 10.10.25: chicken parmesan rolls / barilla protein pasta / salad
saturday, 10.11.25: HOMECOMING DINNER!!
sunday, 10.12.25: turkey meatloaf / roasted veggies (this is another one of those things that i just throw together. i take a sheet pan, spray with oil, cut up our family’s fave veggies – usually mushrooms, broccoli, carrots, potatoes – spray those with oil and sprinkle on some garlic salt. stick in the oven at 350 degrees for 15-20 minutes (or until tender!))
