turkey clubs // a simple weeknight dinner for crazy busy lives

there are some nights when even the simple meal planning that i try to do sometimes just feels like a lot. like, a lot a lot. i usually try to keep weeknight dinners easy, something that gives us some leftovers (but, let’s face it – with two boys, leftovers rarely happen anymore), and that doesn’t make me get every single pot and pan dirty.

enter my new attempt at even easier dinners and the intro of the turkey club into our repertoire. it sounds super simple, but if you’re anything like me, you might:

  1. always fall back to the same dinner ideas
  2. forget about some of the great basic ideas

ours were easy: three slices of whole wheat white bread (we love sara lee!), a little bit of mayo, some romaine lettuce, a couple of slices of tomato, turkey bacon, deli turkey, and a dash of salt and pepper. all built together, cut on the diagonal, and held together with toothpicks (of course!)

to help get a few more veggies into the boys, i added some baby carrots + ranch on the side, and tacked on a chobani yogurt cup for the oldest who can eat all the things, all the time. what sides would your family love to pair up with their club?!?
