re-nest life // what’s for dinner (double edition!)

it’s a special edition this week: two weeks’ worth of meal ideas! this mom didn’t get to share last week’s ideas + this week’s menu is set and ready to go, so why not share all the ideas so you can get double the options?!? we’re headed into a holiday week too, which just seems to cram everything real life into an even shorter time period…so if this helps you make some easier decisions, woohoo!

let’s start with last week’s menu, which btw, ended up being modified one night. it was the boys’ night to make dinner, no. 1 was trying to knock out the rest of his summer school work (plus study for his mandatory constitution test), so pizza was called in. beyond that, we stuck to it pretty well!

week of 6.21.26 – 6.27.26 dinner plan:

sunday, 6.21.26: father’s day dinner out (we hit up dad’s favorite: yen ching!)

monday, 6.22.26: chicken club wrap sandwich / tortellini pasta salad / fruit

tuesday, 6.23.26: mac + cheese homemade pizza (the original plan; the plan was to make homemade dough, create simple pepperoni pizzas and top them with annie’s mac and cheese!) *updated to: we ordered pizza*

wednesday, 6.24.26: salmon avocado salad / sourdough bread

thursday, 6.25.26: slow cooker turkey meatball subs (i make this as simple as possible: frozen turkey meatballs in the crock pot with a jar of marinara) / air fryer mini potatoes / salad

friday, 6.26.26: marinated lime grilled chicken (i totally made this up: i let four chicken breasts marinate in lime juice in the fridge for about 4 hours, threw these on the grill, and voila!) / brown rice / salad

saturday, 6.27.26: dinner out @ topgolf (for no. 2’s belated birthday celebration!)

there’s last week. this coming week, we have a deep heat wave coming through, a quick trip out of town, and the 4th of july. plus, the usual incredibly early cross country practices, afternoon volunteering sessions, and work. overall, i’m trying to keep things as easy as possible with the crock pot stepping in as a big savior this week.

sunday, 6.28.26: homemade pizza / chicken crust pizza

monday, 6.29.26: kid-friendly turkey chili / grilled cheese

tuesday, 6.30.26: cheeseburger crunch wraps / air fryer french fries (it’s the boys’ night to cook!)

wednesday, 7.1.16: chick-fil-a egg white grill copycat sandwich / roasted potatoes / breakfast sausage / fruit

thursday, 7.2.26: slow cooker lasagna / salad

friday, 7.3.26: dinner out

saturday, 7.4.26: 4th of july party!
