re-nest life // what’s for dinner (2/23 – 3/1)

how’s it going, my friends? life here has been filled with: work, school, track season starting up, helping be the communicator for my track parent friends, 4-H, random robotic projects happening at the kitchen table, homework (and many, many quizzes + tests, which means lots of flash cards!), and trying to keep up with the other stuff in life. through it all, we’re keeping up on the decent dinners and making sure we’re all fed.

one thing i haven’t been able to do as much as i like? making stuff in my maker space. it occurred to me this weekend that so much of my making anymore is happening in the kitchen. which is good, but dang it if i don’t miss spending a day in my maker space, creating new designs. maybe sometime this week, i can set aside an evening to even just clean up my space (am i the only one who needs a clean space to be able to start working in?)

so for this weekend, i got creative in the kitchen, figuring out this week’s dinner plan. here we go!

monday, 2.23.26: beef chili / grilled cheese / veggies + ranch

tuesday, 2.24.26: air fryer chicken parmesan / protein pasta / salad (for those who have been along the meal plan ride, chicken parm means one thing: someone has a meet the next day!)

wednesday, 2.25.26: slow cooker salsa verde chicken taquitos (from skinnytaste fast + slow, p. 136) / chips + guac

thursday, 2.26.26: LEFTOVERS

friday, 2.27.26: smash burgerdilla (from skinnytaste high protein, p. 193) / air fryer potatoes / salad

saturday, 2.28.26: spicy salmon sushi bake with edamame + shrimp (from skinnytaste high protein, p. 244)

sunday, 3.1.26: churrasco with salsa criolla (from skinnytaste high protein, p. 207) / brown rice / steamed corn (this is a brand new recipe for us…it sounded super good + it’s beef, which my boys love!)
