
summer is here. at least, school is out meaning summer is here. i’m literally living day-by-day when it comes to the boys’ schedules, my schedule, and who needs to be where and when. and, let’s not forget: not only do i have to feed everyone dinner at night, the kitchen must also be fully stocked for our kidlets to eat breakfast, lunch + dinner AND snacks every day. every grocery trip is obscenely more expensive (absent of the already high prices). i’m now utilizing our backup storage in the house to house the daily food needs for the boys. but i remind myself that these days won’t last forever, and i will miss it when they are off and living their own lives. (sigh.)
alright, enough complaining and moving on to one of this summer’s silver linings: i decided the boys are going to be responsible for dinner one night a week. when i’m meal planning, they have to tell me what they’re going to make and on what night. and what they need to make the meal. that’s what goes on to the meal plan + the grocery list. the benefits of this are two-fold: i don’t have to cook one night. also, i am bound and determined to keep teaching these boys the life skills they’re going to need to know in the world. cooking is a key one. planning ahead is another. because constant dinners from taco bell are not what a healthy meal make.
here’s what we have on tap for this week:
sunday, 6.14.26: grilled salmon / air fryer potatoes / edamame (none of this requires a recipe. i’m going to throw the salmon on the grill, throw the potatoes in the air fryer with some kinder’s garlic butter seasoning + steam the edamame. easy peasy.)
monday, 6.15.26: one pot philly cheesesteak pasta (this has become one on repeat in our house, from the skinnytaste high protein cookbook.)
tuesday, 6.16.26: THIS IS THE BOYS’ NIGHT TO COOK! burrito bowls are on the menu! (i’ve been told this is what’s being made: ground turkey, rice, refried beans, and we’ll have lettuce, queso, black olives, and cheese.)
wednesday, 6.17.26: air fryer chicken tenders / make-your-own salad night (this salad thing? i did this a couple of summers ago + the boys seemed to like it. i basically chop everything up for salad, put it in little bowls/containers, and we have our own little at-home salad bar!)
thursday, 6.18.26: sweet potato burger bowls (another fan favorite from the skinnytaste high protein cookbook.)
friday, 6.19.26: pork tenderloin piccata / salad / mom’s homemade sourdough bread
saturday, 6.20.26: dinner out
