i feel like a broken record: life is busy again this week. and the whole daylight savings thing has seemed to really kick in this week with fewer daylight hours in the evening + waking up in the dark. (in the words of kylie kelce – not gonna lie – this part stinks.) i mean, i love nothing more than cozy season, but dang if it isn’t hard to wake up in the dark. soon enough, i’ll be leaving work in the dark too. (eeek.)
but, we all have to eat! i’m leaning heavy on the slow cooker this week, just for easy prep. i have also come to discover than having a slow cooker meal ready lets us eat at different times, if we need to. (for example, monday night i had a meeting until 6pm, and then had to pick up groceries. oldest son had practice, was home for a bit, and then was off to his own meeting at 6:30pm. having that slow cooker meal ready let him eat before his meeting and before the rest of us got home!)
so, here’s what we’re eating this week:
monday, 10/13: slow cooker buffalo chicken rice bowls
tuesday, 10/14: slow cooker chicken enchiladas / brown rice (i am currently living for the 90 second brown rice packs from aldi!)
wednesday, 10/15: protein spaghetti with meatballs + marinara / salad / crescent rolls
thursday, 10/16: cheeseburger casserole
friday, 10/17: chicken parmesan / protein pasta / salad (night before a meet dinner!)
saturday, 10/18: juicy lucy cheeseburgers / crock pot taco dip / tortilla chips
sunday, 10/19: beef tenderloin / green beans / air fryer potatoes
