the homemade tomato soup you need this season

this weekend, we got our first official snow storm of the season…on the first day of 2022. and, i kinda feel like when this weather hits, it’s an unofficial rule that all the crock pots come out and start brewing up all the warm goodness to help us through the next couple of cold months. (if you’re lucky enough to be reading this in a warm climate, well i always am a fan of crock pot recipes for easy, weeknight meals!)

one meal that always gets me is lunch. most days, i’m able to run home to grab something quickly and i’m famous for always being cold this time of year. soup is awesome for lunches for me…paired up with a turkey sandwich or a salad, it’s quick and easy for me to grab, eat and get back to the office. and, for those days when i pack a lunch, it’s fantastic to take with and warm up at the office!

tomato soup is always a fave of mine, so i wanted to try and see if i could whip up a batch of homemade tomato soup to eat off of through the week. i have to say, this recipe turned out pretty great (and it pairs fantastic with a grilled cheese!)

homemade crock pot tomato soup

1 can crushed tomatoes
2 cans diced tomatoes
4 t. olive oil
3 cloves minced garlic
1 c chopped carrots
1 c chopped onion
1 c low sodium chicken broth
1 T. basil
dash of salt

throw everything in the crock pot. set on low for 4-5 hours. enjoy!
