clearly, life has had me other places. (more to come on that in a future post!) but this week’s menu was just too good not to share, even if it’s a little behind (and the plus? i have a pic of one of this week’s new recipes, so you can see what it looks like + i have ratings from the boys!) so if you’re thinking towards next week on this holiday weekend, and need a little help with an easy dinner plan for the coming week, this is the place for you!
after being on spring break last week + getting a total break from cooking (thanks nana + papa!), it was time to get back on the wagon this week. and we did with some new ideas from my all-time fave: gina at skinnytaste.

ready for some ideas? here’s what we ate this week:
sunday, 3.29.26: creamy lemon chicken / brown rice (i live for using the 90 second rice packets at aldi) / steamed green beans
monday, 3.30.26: one pot philly cheesesteak pasta (featured in the skinnytaste high protein cookbook) / salad (this was a new, 5 star recipe, as voted on by all of my boys! i believe the exact words were, “this is so good mom. can you make it again? is there more?”)
tuesday, 3.31.26: slow cooker chicken taco chili (featured in skinnytaste fast + slow) with brown rice
wednesday, 4.1.26: smash burgerdillas (featured in the skinnytaste high protein cookbook) / air fryer potatoes / veggies + ranch (the smash burgerdillas are always a super favorite for the boys + they are super fast for a weeknight dinner!)
thursday, 4.2.26: leftovers
friday, 4.3.26: homemade pizza (my go-to pizza dough recipe is bobby flay’s) / salad
saturday, 4.4.26: sweet potato burger bowls (featured in the skinnytaste high protein cookbook)
sunday, 4.5.26: sunday pot roast (featured in the skinnytaste high protein cookbook) / mashed potatoes / steamed carrots
the whole sunday pot roast thing is going to be a first for me. but me + a large piece of meat + my trusty crockpot and we’ll get through it somehow! while this week wasn’t as busy in the evening as we usually have, there was just a lot happening with work and school for the boys, so this menu helped a ton. if you have as busy a life as what we do, hope these ideas provide some inspo for your menu this coming week!
