on-the-go has been the way we’ve been for the past week. and, it’s how we’ll be this week. mom’s got volunteering after work. the kids have new winter activities starting. oh, and we’re adding in a trip back to indiana this weekend. the one thing i did that is helping: i actually was able to get meal planning + grocery shopping finished for the week on sunday. i can’t tell you how much that takes the stress off!
for this week, i sat down with actual, real-life hardbound cookbooks! i have a collection from my favorite recipe site, skinnytaste, that i love to take a look through every couple of weeks to get some new ideas! this week, we’re trying a few new variations on some favorites before we head out of town for the weekend:
monday, 11.3.25: teriyaki chicken bowls with rice + green beans
tuesday, 11.4.25: so-addicted chicken enchiladas / leftover rice from monday / chips + guac
wednesday, 11.5.25: garlicky lemon shrimp + broccoli stir fry / rice or hearts of palm pasta (from the skinnytaste cookbook)
thursday, 11.6.25: firecracker brats / french fries / salad
friday, 11.7.25: dinner on the road
saturday, 11.8.25: dinner in indiana
sunday, 11.9.25: spaghetti + meatballs / french bread / salad
okay, so we have a couple of meals that will be on the road or away from home this week. what will we likely have? my guess is that friday night’s dinner will be something fast on the road – think portillos or jimmy john’s. dinner on saturday night will be the one-and-only pizza king…the one thing we never miss when we head back to indiana!
