re-nest life // a back-to-school meal plan

so, if you follow me on socials, you know i’ve started sharing my weekly meal plans. i rely on this pre-planning so much, and i figured that other families out there could use the same kind of help. with a teen + a tween, three sports teams, clubs, meetings, homework + the grown-up work of two parents, back-to-school season requires having at least dinner figured out each night.

on top of everything, it’s super important to us to try and eat on the healthy side with a balance of protein, veggies, and carbs. both boys are cross country runners (one plays soccer too), so making sure they are running on more than nerds gummy clusters and granola bars is key. so, school starts this week, and we’re on a dinner plan.

here’s what is on our dinner plan this week:

monday, 8.18.25: cheeseburger crunchwraps / mini potatoes roasted in the air fryer / salad / fruit

tuesday, 8.19.25: the best chicken enchiladas / brown rice in the rice cooker / refried beans

wednesday, 8.20.25: air fryer steak / roasted veggies

thursday, 8.21.25: kid friendly crock pot turkey chili with protein pasta

friday, 8.22.25: chicken parmesan / protein pasta / salad

saturday, 8.23.25: arroz con camarones

sunday, 8.24.25: pineapple chicken stir fry with extra veggies
