re-nest life // what’s for dinner: week of 5.3.26 – 5.9.26

friends, i’m so tired of cooking. i’ll say it. i’m so over this. like, i’ll keep doing it because i get hangry if i don’t eat and my family definitely needs to eat, but i’m tired. and, i’ve anecdotally seen a lot of you posting about this on socials lately too. it’s spring time (is it though? because we keep having weather that’s requiring the below look.), school is nearly over, if your kids are in the spring play, spring orchestra concert, spring sports, or have their end of year projects coming up, dinner just feels like one. more. thing. oh, and let’s not forget our fellow parent/guardian friends who are helping shepard high school seniors through their last weeks of school. (bless you. i can’t imagine.)

time stamp: saturday, 5.2.26 in northern illinois. required my winter coat, hat + giant l.l. bean fuzzy gloves AND a blanket.

so, here we are. what we’re eating this week. (warning: it’s heavy on the mexican flare. not sure why, it just felt a little easier!)

sunday, 5.3.26: leftovers (hallelujah. never sleep on having a leftovers night. i genuinely was so happy to not have to cook one evening!)

monday, 5.4.26: spaghetti with meat sauce / salad (the meat sauce i make is literally a pound of lean ground turkey, cooked in a skillet with a healthy dose of garlic + a tablespoon of italian seasoning. once cooked through, add your fave marinara.)

tuesday, 5.5.26: taco night (includes: lean ground turkey, queso, chopped lettuce, cilantro, salsa, shredded cheese, brown rice, nacho chips + tortillas. basically anyone can make what they want.)

wednesday, 5.6.26: air fryer chicken flautas / corn tomato avocado salad

thursday, 5.7.26: chicken parmesan (again. there’s a track meet tomorrow!) / protein pasta / salad

friday, 5.8.26: dinner out (we have a track meet in wisconsin. which sounds far. it’s not really. but it’s going to be far enough + late enough that i’m making dinner easy.)

saturday, 5.9.26: honey sriracha roasted salmon rice bowl with edamame

god speed, my friends. it’s maycember + we’re all feeling it. take care of you, drink your water + make sure to eat!
