re-nest life // a dinner plan for better health

this week’s meal plan looks different. the dinner ideas at first look appear more basic. less involved. and that’s on purpose. this week, our family is coming together to support my oldest as he does the low fodmap elimination diet this week.

without sharing huge details, our son has been going through some rough stuff this past cross country season and we’re working with his pediatrician on trying something to see if we can figure out what’s going on. one of these things is for him to do the low fodmap elimination diet for a week. had i ever heard of this elimination diet? yes. did i really know anything about it? nope. let’s just say that i now have approximately 26,354 browser tabs open on my phone about all things low fodmap.

a breakfast option: oats with almond milk yogurt with 1/2 banana

since it’s a monday, we started today. to be totally honest, it didn’t feel like our dinners would be terribly impacted…a lot of what’s on low fodmap is stuff we already eat pretty regularly. what was going to be impacted for our son was his breakfast and lunches. not to mention the fact that he’s a 16-year-old teenage boy who consumes a lot of food, so i had to figure out how to still keep the calories going for him, even with these changes.

so, what are we eating for dinner this week with this change? here we go (get ready for a lot of potatoes and very few actual recipes…i’m honestly going to just be throwing these things together as i make them!):

monday, 11.17.25: grilled chicken with lemon + salt / air fryer mini potatoes / green beans with almonds

tuesday, 11.18.25: burrito bowls with chips + homemade guacamole (my oldest makes the *best* homemade guac that he can eat!)

wednesday, 11.19.25: breakfast for dinner (for our oldest: scrambled eggs, protein pancakes, peanut butter toast + fruit)

thursday, 11.20.25: grilled salmon rice bowls with carrots, green beans, bell pepper + broccoli

friday, 11.21.25: grilled steak / air fryer mini potatoes / salad

saturday, 11.22.25: turkey burgers (with udi’s hamburger buns) / salad / air fryer potatoes

sunday, 11.23.25: low fodmap shrimp stir fry with bell peppers / rice

wish us luck this week…i know it’s going to be tough for him, but we’ll see if any of these changes help him out!
