re-nest life // what’s for dinner: week of 10.12.26 – 10.18.26

the weekly dinner plans are back! i can’t tell you how much continuing to do these every week for the last couple of months has kept me grounded with the changes to our family’s groove. not only have we navigated starting school for a senior + an 8th grader, but i changed jobs…which meant a change to my weekly schedule. knowing i at least have dinner figured out when i’m off to the office at 6:45am has been such a godsend.

‘ve said it before and i’ll say it again: if you decide to do a weekly meal plan, i cannot stress enough the suggestion to look at what your evening schedule is when making your plan. you can always see that i note what is going on with us each night on the plan…that 1000% guides the amount of time i feel like i’ll have to make dinner and get everyone fed. it’s a game changer. (i also add in the consideration of my days working in the office now too…my days in the office tend to have dinner plans that are on the easier side of prep!)

so as we head into mid-october, here’s what we’re prepping + enjoying this week on top of managing soccer, evening meetings, games + volunteering!

monday, 10.12.26: leftovers (i cannot stress enough how much easier this can make one night of your week!)

tuesday, 10.13.26: ground beef + broccoli stir fry

wednesday, 10.14.26: egg white grill / air fryer potatoes / fruit

thursday, 10.15.26: buffalo chicken potato skins / hot spinach artichoke dip + crackers / veggies + ranch

friday, 10.16.26: slow cooker lasagna / salad

saturday, 10.17.26: dinner out!

sunday, 10.18.26: chicken meatballs with pineapple coconut sauce + rice
